Ingredients

  • For the Peach Filling:
  • 8 cups fresh peaches peeled and sliced (about 8-10 large peaches)
  • 1 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons cornstarch
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons butter cut into small pieces
  • For the Cobbler Crust:
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 12 tablespoons cold unsalted butter cubed
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons coarse sugar for topping optional

Instructions

  • Bake until golden brown. Place the cobbler in the preheated oven and bake for 45-50 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
  • Cool slightly. Allow the peach cobbler to cool for at least 15-20 minutes before serving. This helps the filling set slightly and prevents burned mouths!
