Directions:

  1. Preheat your oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or line it with cupcake liners. Set aside.
  2. In a medium bowl, mix the brown sugar, granulated sugar, and cinnamon. Stir in the melted butter. Use a fork to combine the flour without overmixing; the mixture should have large crumbles. Set aside or refrigerate until ready.
  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using). Set this aside.
  4. In another large bowl, beat the softened butter, granulated sugar, and brown sugar on high speed until smooth. Add the sour cream, eggs, and vanilla. Beat until combined.
  5. Pour the dry ingredients into the bowl with the wet ingredients and mix on low speed until just combined. Add the milk and continue mixing until combined. Gently fold in your favorite add-ins.
  6. Spoon the batter into the prepared muffin cups, filling them all the way to the top. Sprinkle with coarse sugar or add the crumb topping if using, gently pressing it into the batter.
  7. Bake your muffins for 5 minutes at 425°F (218°C). Then, reduce the oven temperature to 350°F (177°C) and bake for an additional 15 to 18 minutes or until a toothpick comes out clean. Allow your muffins to cool for 10 minutes in the pan, then transfer them to a cooling rack.
  8. Store leftover muffins covered at room temperature for up to 5 days or in the fridge for up to 1 week.
