Why Make This Recipe

Scones are delicious, versatile, and easy to make. Whether you enjoy them for breakfast, an afternoon snack, or as part of a tea party, they always bring a smile. These perfect scones are light, flaky, and customizable with your favorite add-ins. Plus, they are quick to make, making them an excellent choice for any occasion.

How to Make Perfect Scones

Ingredients:

  • 2 cups (250g) all-purpose flour (spooned & leveled), plus more for hands and work surface
  • 1/2 cup (100g) granulated sugar
  • 1/2 teaspoon salt
  • 2 and 1/2 teaspoons baking powder
  • 1/2 cup (8 Tbsp; 113g) unsalted butter, frozen
  • 1/2 cup (120ml) heavy cream or buttermilk (plus 2 Tbsp for brushing)
  • 1 large egg
  • 1 and 1/2 teaspoons pure vanilla extract
  • 1-1.5 cups add-ins such as chocolate chips, berries, nuts, fruit, etc.
  • Optional: coarse sugar for topping

Directions:

  1. Whisk flour, sugar, salt, and baking powder together in a large bowl. Grate the frozen butter using a box grater. Add it to the flour mixture and combine using a pastry cutter, two forks, or your fingers until the mixture resembles pea-sized crumbs. Place in the refrigerator or freezer while you prepare the wet ingredients.

  2. In a small bowl, whisk together 1/2 cup heavy cream, the egg, and vanilla extract. Drizzle this over the flour mixture, add your chosen add-ins, and mix until all ingredients are moistened.

  3. Pour the dough onto the counter and, using floured hands, form it into a ball. The dough should be a bit sticky; if it’s too sticky, add a little more flour. If too dry, add 1-2 more tablespoons of heavy cream. Shape into an 8-inch disc and cut into 8 wedges. For smaller scones, make two 5-inch discs and cut each into 8 wedges. For drop scones, mix until combined and drop about 1/4 cup of dough onto a lined baking sheet.

  4. Brush the scones with the remaining heavy cream and, if desired, sprinkle with coarse sugar. You can do this before or after refrigerating.

  5. Place the scones on a plate or lined baking sheet and refrigerate for at least 15 minutes.

  6. Meanwhile, preheat the oven to 400°F (204°C).

  7. Line a large baking sheet with parchment paper or silicone baking mat. If making mini or drop scones, use 2 baking sheets. Arrange the scones 2-3 inches apart on the prepared baking sheet(s).

  8. Bake for 18-26 minutes or until golden brown around the edges and lightly browned on top. Larger scones may take closer to 25 minutes. Remove from the oven and cool for a few minutes.

  9. Leftover scones can stay fresh at room temperature for 2 days or in the refrigerator for up to 5 days.

How to Serve Perfect Scones

Serve your fresh scones warm or at room temperature. They are delightful on their own or served with butter, jam, clotted cream, or fresh fruit. A cup of tea or coffee pairs perfectly with your scones, making them a perfect treat for any time of day.

How to Store Perfect Scones

Store leftover scones at room temperature in an airtight container for up to 2 days. If you want to keep them longer, you can store them in the refrigerator for up to 5 days. If you notice they are getting a bit stale, you can warm them in the oven for a few minutes before serving.

Tips to Make Perfect Scones

  • Use cold or frozen butter for the best flaky texture.
  • Don’t overmix the dough to keep your scones light and fluffy.
  • Experiment with different add-ins like fruits, nuts, or chocolate chips.
  • Make sure to chill the dough for at least 15 minutes before baking for even better results.

Variation

You can easily customize these scones by adding different flavors or toppings. Consider using lemon zest for a citrus flavor, dried fruits for sweetness, or even herbs like rosemary for a savory option. Be creative with your add-ins!

FAQs

1. Can I freeze scones?
Yes! You can freeze unbaked scones. Just shape the dough, place it on a baking sheet, cover, and freeze. Once frozen, transfer them to a freezer bag. When ready to bake, no need to thaw—just add a few extra minutes to the baking time.

2. What can I use instead of heavy cream?
You can use buttermilk, milk, or a dairy-free substitute like almond milk. Just be aware that different liquids may change the texture slightly.
