  • 3/4 cup (95g) chopped walnuts or pecans
  • 3/4 cup (105g) dried cranberries
  • 1 Tablespoon (21g) honey
  • 1 and 1/2 cups (360ml) warm water (about 95°F or 35°C)

Directions:

  1. In a large bowl, stir together the first five ingredients using a silicone spatula. Mix the honey and warm water together, then pour over the dry ingredients. Blend until well combined. The dough will be very sticky. Resist adding more flour; it should be sticky. Shape it into a ball as best as you can.

  2. Cover the bowl tightly and let it sit at room temperature for 12–18 hours. The dough will rise and may have air bubbles on the surface.

  3. Gently turn the dough onto a lightly floured surface and shape it into a ball. Transfer it onto a large piece of parchment paper. Score an X on the top with a sharp knife or kitchen shears. Place the dough in a bowl to rest for 30 minutes.

  4. Preheat your oven to 475°F (246°C). Place a Dutch oven (with its lid) in the oven for 30 minutes to get it very hot. After 30 minutes, carefully lift the dough with the parchment paper and place it inside the pot. Cover with the lid.

  5. Bake for 25 minutes with the lid on. Then, remove the lid and bake for another 8–10 minutes until the bread is golden brown. To check doneness, give the bread a light tap; it should sound hollow. An instant-read thermometer should read 195°F (90°C) in the center.

  6. Remove the pot from the oven, take out the bread, and let it cool on a wire rack for at least 20 minutes before slicing.

  7. Cover and store any leftover bread at room temperature for up to one week.
